GiveAway !! Heralding the New Year - Pineapple Zabaglione with Whipped Cream and candied Orange Peels!

Today is a very special day for us and am very grateful to God for bringing my better half into my Life. And these are few of the lines from the poem "A Promised Love"  [Copyrighted] written by me for the Love we share -

Word I give you - Woman, only to thine,
Eyes that search for you in this sojourn,
Arms that reassure - All is fine,
Tears to shed when you mourn.
A heart where you will always belong,
faithful spirit united in God,
a promised Love that you so long... 

It all still looks like a dream - a beautiful dream.
And I don't know how this stranger became my friend and then my Love. The years I have known my good friend and the last year as his wife has taught me much. Through marriage, God shows unto us the reflection of our self - How we are different from one another, yet united!
Am the talkative one and the spokesperson of our Home [as He puts it..hehe] and he, the calm and collected. Am right brained and he is left. I like Egg white, he yellow. I love clowning around, he is composed. I write a lot, he listens. I laugh loud enough to scare the neighbor, one can not make out how he feels.
But we just need each other, I go to him for rationalism and he comes to me for my philosophies and fantasies. I love his levelheadedness and he is crazy about my whimsical nature. He is my audience and am his entertainment..hehe :D

RULES

Note - If Indian readers have folks or friends in USA, you can participate and provide their US address as recipients once you win! I did the same when I resided in India and collected them later :) 




Ingredients -
For Zabaglione -
* Egg yolks - 4 nos [Fresh and at room temperature]
* Pineapple juice - 1/2 cup
* Sugar - 1/2 cup
* Vanilla Extract - 1 tsp
* Brandy - 1 tsp [Optional]
* Gelatin - 1 tsp
* Warm water - 2 tsp


For Candied Orange peels -
* Blanched Orange peels - 1/2 cup [Chopped in julienne style]
* Sugar - 1 cup
* Water - 1 cup
* Brandy - 1 tsp [Optional]


For Whipping Cream  -
* Heavy Whipping Cream - 1 cup [atleast 30% Fat content]
* Sugar - 1/4 cup [Add more or less, according to your interest]
* Vanilla Extract - 1 tsp


For Assembling -
* Drained Crushed / finely chopped Pineapple - 400 gms [I got a can of Dole's crushed Pineapple]


Cooking -
For Zabaglione
1. Seperate 4 Eggs and add the 4 Egg yolks into a bowl. Into the Egg yolks, add Sugar, Vanilla Extract and Brandy. Whip the Egg mixture for 2 mins until it is pale yellow in color.
3. In a small bowl, add 2 tsp of water and 1 tsp of Gelatin and mix well. If required, Microwave for 5 secs  for the Gelatin to dissolve completely. Keep aside.
2. Place the bowl of beaten Egg yolks mixture over a Double-boiler and add the Pineapple juice slowly, keep stirring. Then add the dissolved Gelatin mixture slowly and keep whisking.
3. It took me about 20-25 mins for the Eggs to get a custard like texture and keep whisking all the time. Once they thicken, remove from the Double-boiler and let it rest for a few mins.
4. Pour the Zabaglione on a trifle / serving bowl layered with crushed / finely chopped Pineapple. 
5. Let it rest undisturbed overnight.


For Candied Orange Peels
1. Using a peeler, peel the skin of the Oranges finely. Chop the Orange peels in julienne style and keep aside.
2. In a pan of water, add the chopped Orange peels and bring them to boil. Blanch them 2-3 times as per your desired bitterness for the peels.
3. Drain the blanched Orange peels and keep aside.
4. In another pan, add a cup of water, Sugar, Brandy and Vanilla Extract. Into this sugar syrup, add the blanched and drained Orange peels. Cook the mixture on medium-heat on stove until the peels become translucent and the syrup is completely reduced. Make sure to stir in between to avoid the bottom getting burnt. Once the syrup is reduced, remove the peels from stove and let it rest.
5. Once the peels cool down to room temperature; They can be bottled and refrigerated for a long time.
Note: I made my candied Orange peels ahead of time and refrigerated them. These can be used for many Desserts.


For Whipped Cream -
1. In a large cold bowl, add the Cream, Sugar and Vanilla Extract. Whip with a hand-mixer for about 5-7 mins to get a firm texture. Make sure not to over-beat, whip just until firm peaks form on the whisk. 


For Assembling -
1. After 6-7 hours or overnight, the Zabaglione would have set over the layered Pineapple. Remove the trifle / servin bowl from the Fridge.
2. Using a piping bag, pipe the Whipped Cream onto the set Zabaglione.
3. Garnish with the candied Orange peels, while serving [Optional].


This is best served cold after the main course.

  2. Wow!!! I love both the books so much :)My reason for my love of food is my MOM!! She inspired and taught me so beautifully! It was never a big deal, the learning I mean, she would just drop by hints whenever we were together, like don't use this with that, this doesn't pair well with that and so many more things! I love her all the more for she taught me how to love food!!

At first, I just threw things together to get everyone fed, but now I enjoy putting together a meal that makes everyone feel pampered.   15. what really made my love to cooking and baking to a passionate hobby/ pleasure for the last two years was My sweet love. Two years ago, I had to go through a long recovery from a car accident, which made me stay at home 24/7. my sweet love supported me financially, emotionally and everything i could ask. I found it naturally, the way i can give him back that I want to cook and bake the best for him. I spend Endless hours, and days for the best recipes, just to please his tummy.and to show how great full I was/am for all he done for me.I truly believe that me cooking and baking for him made our relationship even stronger. Instead eating on the road, out side we now spend everyday time around the table, as family like. Having the best dinner/lunch and of coarse A great home made desert.

I enjoy experimenting with different recipes to the point that my husband gets exasperated with me and asks me if I could not make the same recipe twice!! Hehe...     I came to love cooking because of the incredible smells that wafted from my mother's kitchen. Always had a nose for cooking smells and nothing turns me on till date, like the aroma of food! Freshly brewing coffee, freshly baked bread, the nutty aroma of mustard seeds as they pop in hot coconut oil, cinnamon rolls baking in the oven, a thick juicy steak sweating it out on a sizzling hot grill- they can all cause my heart to beat faster! Needless to say, I grew up into a foodie with a big love for cooking and a need to improvise upon and 'own' every dish I cook. It is my drug of choice. You have a great blog, btw. I love the variety on here. Nice clicks too. Your passion for food comes across loud and clear!
